David Bouley, American Fine Dining Legend, Passes Away at 70

One of the greats of American fine dining has sadly passed away. David Bouley, the renowned chef and restaurateur whose empire inspired a whole generation of chefs, died on Monday at the age of 70. The New York Times reported that Bouley suffered a heart attack at his home in Kent, Connecticut.
Known for his innovative approach to cuisine, Bouley revolutionized the way Americans ate through his restaurants, which included Montrachet, Bouley, Danube, and Brushstroke. He introduced vegetable-based sauces, locally-sourced ingredients, and Japanese-style tasting menus long before they became popular in kitchens across the United States. With a philosophy of serving meals without a menu, Bouley wanted diners to trust him and his culinary expertise implicitly.
His talent was recognized by the industry, as several of his establishments received prestigious Michelin stars. Bouley holds the distinction of being the only American-born chef to have received a review from every New York Times restaurant critic since 1985. In fact, Bouley’s eponymous restaurant received a coveted four-star rating in 1990.
